NEW ITEMS ARRIVED

FIESTA CHICKEN ENCHILADAS

I just made this enchilada casserole and it is great.  Give it a try.  The recipe came from the Kraft website. kraft.com.

what you need

lb.  boneless skinless chicken breasts, cut into bite-size pieces

 each large green and red pepper, chopped

Tbsp.  chili powder

3/4
cup  TACO BELL® Thick & Chunky Salsa, divided

oz.  (1/4 of 8-oz. pkg) PHILADELPHIA Neufchatel Cheese, cubed

3/4
cup  KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese, divided

8
 whole wheat tortillas (6 inch)

HEAT oven to 375ºF.
COOK chicken, peppers and chili powder in large skillet sprayed with cooking spray on medium heat 8 min. or until chicken is done, stirring frequently. Stir in 1/4 cup salsa and Neufchatel; cook and stir 3 to 5 min. or until Neufchatel is melted and mixture is well blended. Stir in 1/4 cup shredded cheese.
SPOON heaping 1/3 cup mixture down center of each tortilla; roll up. Place, seam sides down, in 13x9-inch baking dish sprayed with cooking spray; top with remaining salsa and shredded cheese. Cover.
BAKE 20 min. or until heated through.

TEX MEX CHOPPED CHICKEN SALAD

Tex-Mex Chopped Chicken Salad Recipe

The perfect recipe for summer! Loaded with fresh produce and topped with a homemade dressing, this salad is absolutely delicious.
Ingredients
  • 3 cups cooked chicken, shredded (rotisserie chicken works great)
  • 1 head romaine lettuce, washed and cut into bite-sized pieces
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 2 tomatoes, diced
  • 2 tablespoons onion, diced
  • 2 avocados, diced
  • ¼ cup fresh cilantro, chopped (or 1 teaspoon dried cilantro)
  • 1 cup crushed tortilla chips
Taco Ranch Dressing:
Instructions
  1. In a large bowl, mix together all the salad ingredients, minus the tortilla chips.
  2. In a small bowl, mix together salad dressing ingredients. Pour salad dressing over the salad, as much or as little as you like (depending on what you prefer). Top with chips and serve.
